The Filloa de Lestedo Festival, declared a Festival of National Tourist Interest in 2024, offered a sensory tasting this morning for members of ONCE Santiago. This initiative, included in the Filloa Cooking section of the event, was attended by around 40 people, more than half of whom were members of ONCE.
The mayor of Boqueixón, Ovidio Rodeiro; the director of the Santiago de Compostela Agency, José Antonio Riveiro; and the president of the Lestedo Filloa Association, Juan Silva, closed the event. The councillor once again thanked ONCE for its involvement in promoting the Filloa de Lestedo Festival and stressed that activities such as today’s show that ‘the Filloa de Lestedo brings people together, and very much so’.
For his part, José Antonio Riveiro thanked everyone for ‘the excellent organisation of the event’ and hoped that this would be the beginning of future collaborations. Juan Silva took the opportunity to invite those participating in the activity to come to Lestedo this Sunday to enjoy the big day of the Filloa Festival.
Putting smell and taste to the test
Attendees wore masks to test their senses of smell and taste when sampling three wines from the Rías Baixas Designation of Origin, from the Ribeira de la Ulla subzone, and several dishes that paired perfectly with the selected wines. To do so, they followed the instructions of Charly Torres, a teacher at CIFP Compostela specialising in Catering Services, and chef José Manuel Mallón, who surprised them with the following tapas: Fried Lestedo filloa with Galician beef steak tartare with fresh herbs; Cannelloni made with chickpea filloa and sautéed chorizo with Arzúa-Ulloa PDO cheese; Filloa flambéed with Galician ‘Orujo’, Cebreiro PDO cheese and fig jam.
